For hundreds of years families in Bethlehem and Jerusalem have been carving olive wood for souvenirs and religious items for pilgrims.

No olive trees are cut solely for their wood; instead, off-cuts from the annual pruning and trimming trees are used.

Olive trees provide local people with oil for cooking, olives for eating, and wood for making beautiful objects.
